Pulled Pork

Pulled pork definitely falls into the comfort food category.  It has such a delightful texture and aroma.  I like it on top of steamed rice served in a bowl and topped with spicy BBQ sauce.  This is a great meal to pop into the slow cooker before going to work – so simple and low effort.  When you get home, the house is filled with a mouth watering aroma.  I always put a large portion of this in the fridge, store in a Glad food storage container, as a go to quick meal and also a great item to pack for lunch.

This dish is pretty darn simple and so delicious.  It’s hearty and savory texture and flavor make is perfect for fall.  For such a rich and satisfying dish, this is only has 1/3 of the daily recommended limit (200mg) for those that need to watch their cholesterol.
